Description
This jar reminds me of the mountain hut in Hala Lipowska in the Żywiec Beskids. It was late, mid-winter, and we arrived there on ski tours, hungry and exhausted. The soup we got was thick with tomatoes, and it saved us. At the heart of this dish are ripe tomatoes, carefully cooked to bring out their full flavor and deep color. The idea of adding tart apples comes from Lower Silesian cuisine, while sweet roasted bell pepper provides a balancing sweetness.
