Description
Charring an eggplant, cutting it open and discovering how its once firm, fleshy interior has darkened and softened is one of those wonderful little culinary surprises. The tradition of charring and grilling food over an open flame has its roots in the Middle East. From Israel and Armenia to Iran, cultures across the region have perfected the art of cooking with fire.
I was once invited to an Armenian barbecue. The women sat on a rug, talking, while the men gathered around the fire. A beautiful sight.
